Ingredients
  

Vegetables
  • 2 cups chopped cucumbers
  • 2 cups chopped tomatoes
  • 1 cup sliced red onion
  • 1 cup green bell pepper
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper
Toppings
  • 1 cup feta cheese crumbled
  • 1/4 cup black olives sliced

Method
 

Preparation
  1. In a large mixing bowl, combine cucumbers, tomatoes, red onion, and green bell pepper.
  2. In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with feta cheese and black olives before serving.
