- Grate the zucchini and squeeze out excess moisture.
- In a mixing bowl, combine grated zucchini, chopped onion, and spinach.
- Add crumbled feta cheese, egg, and flour to the mixture.
- Season with salt, black pepper, and oregano. Mix well.
Cooking
- Heat olive oil in a frying pan over medium heat.
- Scoop spoonfuls of the mixture and form patties.
- Fry the patties for about 3-4 minutes on each side until golden brown.
- Remove from pan and drain on paper towels.
