Ingredients
  

Vegetables
  • 2 medium zucchini grated
  • 1 medium onion finely chopped
  • 1 cup spinach chopped
Binders
  • 1 cup feta cheese crumbled
  • 1 large egg
  • 1/2 cup all-purpose flour
Seasonings
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
Oil
  • 2 tablespoons olive oil for frying

Method
 

Preparation
  1. Grate the zucchini and squeeze out excess moisture.
  2. In a mixing bowl, combine grated zucchini, chopped onion, and spinach.
  3. Add crumbled feta cheese, egg, and flour to the mixture.
  4. Season with salt, black pepper, and oregano. Mix well.
Cooking
  1. Heat olive oil in a frying pan over medium heat.
  2. Scoop spoonfuls of the mixture and form patties.
  3. Fry the patties for about 3-4 minutes on each side until golden brown.
  4. Remove from pan and drain on paper towels.
