Ingredients

  • 1 cup cherry tomatoes
  • 1 cup bell peppers sliced
  • 1 cup grilled chicken sliced
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup cilantro chopped
Dressing
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Marinate the chicken with olive oil, lime juice, cumin, salt, and black pepper for at least 30 minutes.
  2. Grill the chicken over medium heat until fully cooked, about 6-7 minutes per side.
Assemble the Salad

  2. Drizzle with dressing and toss to combine.
