  • 4 cups watermelon, cubed preferably seedless
  • 1 cup feta cheese, crumbled can substitute with goat cheese
  • 1/4 cup fresh basil leaves torn
  • 2 tablespoons olive oil for drizzling
  • 1 tablespoon balsamic vinegar optional for extra flavor

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Cut the watermelon into thick slices and grill for about 2-3 minutes on each side until grill marks appear.
  3. Remove the grilled watermelon from the grill and let it cool slightly before cutting it into cubes.
  4. In a large bowl, combine the grilled watermelon, feta cheese, and basil leaves.
  5. Drizzle with olive oil and balsamic vinegar, if using, and gently toss to combine.
  6. Serve immediately and enjoy!
