Ingredients
  

Chicken and Potatoes
  • 2 lbs chicken breasts boneless, skinless
  • 1 lb potatoes cubed
  • 2 tbsp olive oil for grilling
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup fresh herbs such as parsley and dill
Dressing
  • 3 tbsp lemon juice
  • 1 tbsp mustard
  • 1 clove garlic minced

Method
 

Prepare Chicken and Potatoes
  1. Preheat the grill and season the chicken with olive oil, salt, and pepper. Grill until cooked through.
  2. Boil the potatoes in salted water until tender, then drain and let cool.
Make Dressing
  1. In a bowl, whisk together lemon juice, mustard, and minced garlic.
Combine Salad
  1. In a large bowl, combine grilled chicken, cooled potatoes, fresh herbs, and dressing. Toss to combine.
