Ingredients
  

Chicken Burgers
  • 1 lb ground chicken
  • 1 cup jalapeños, diced seeds removed for less heat
  • 1 cup cheddar cheese, shredded
  • 1 tsp salt
  • 1 tsp pepper
Corn Fritters
  • 1 cup corn kernels fresh or frozen
  • 1 cup flour
  • 1 large egg
  • 1 cup milk
  • 1 tsp baking powder

Method
 

Prepare the Chicken Burgers
  1. In a mixing bowl, combine ground chicken, diced jalapeños, shredded cheddar, salt, and pepper. Mix well.
  2. Form the mixture into patties.
  3. Preheat the grill and cook the patties for about 5-7 minutes on each side, or until fully cooked.
Make the Corn Fritters
  1. In another bowl, mix corn, flour, egg, milk, and baking powder until combined.
  2. Heat a frying pan over medium heat and add oil.
  3. Spoon the corn mixture into the pan and cook until golden brown on both sides.
Assemble the Burgers
  1. Place the cooked chicken patties on buns and top with corn fritters.
  2. Serve with your favorite condiments.
