Ingredients
  

Dry Ingredients
  • 1 cup cornmeal
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk
  • 1 large egg
Add-ins
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped jalapenos fresh or pickled
For Frying
  • 2 cups oil for frying

Method
 

Preparation
  1. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  2. In another bowl, whisk together buttermilk and egg.
  3. Combine the wet and dry ingredients until just mixed.
  4. Fold in the cheddar cheese and jalapenos.
Cooking
  1. Heat oil in a fryer to 350°F (175°C).
  2. Drop spoonfuls of the mixture into the hot oil.
  3. Fry until golden brown, about 3-4 minutes.
  4. Remove and drain on paper towels.
