Ingredients
  

Creme Brulee Base
  • 2 cups mashed Japanese sweet potatoes
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 4 egg yolks
  • 1 teaspoon vanilla extract
Topping
  • 1/4 cup sugar for caramelizing

Method
 

Prepare the Base
  1. Preheat the oven to 325°F (160°C). In a bowl, mix the mashed sweet potatoes, heavy cream, sugar, egg yolks, and vanilla extract until smooth.
  2. Pour the mixture into ramekins.
Bake
  1. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  2. Bake for about 30 minutes or until set.
Caramelize the Topping
  1. Remove from the oven and let cool. Sprinkle sugar on top of each ramekin and use a kitchen torch to caramelize the sugar until golden brown.
