Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Filling
  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 large eggs
  • 1 tablespoon cornstarch

Method
 

Prepare the crust
  1. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in egg yolk and ice water until dough forms.
  2. Press the dough into the tart pan and chill for 30 minutes.
  3. Preheat the oven to 350°F (175°C). Bake the crust for 15 minutes or until lightly golden.
Make the filling
  1. In a bowl, whisk together sugar, lemon juice, lemon zest, eggs, and cornstarch until smooth.
  2. Gently fold in the blueberries.
Bake the tart
  1. Pour the filling into the baked crust and bake for an additional 30 minutes or until set.
  2. Allow to cool before serving.
