  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup coconut milk
  • 1 cup mashed ripe mango
  • 1/2 cup shredded coconut
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine all the dry ingredients.
  3. Add the eggs, coconut milk, and mashed mango to the dry ingredients and mix until smooth.
  4. Fold in the shredded coconut.
  5. Pour the batter into a greased cake pan.
  6. Bake for 30 minutes or until a toothpick comes out clean.
  7. Let the cake cool before serving.
