Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the delicata squash in half lengthwise and scoop out the seeds.
  3. Cut the squash into half-moon slices.
  4. In a bowl, mix the maple syrup, olive oil, salt, and black pepper.
  5. Toss the squash slices in the maple mixture until well coated.
  6. Spread the coated squash on a baking sheet in a single layer.
  7. Roast in the preheated oven for 25-30 minutes, turning halfway through, until tender and caramelized.
