- Slice the delicata squash in half lengthwise and scoop out the seeds.
- Cut the squash into half-moon slices.
- In a bowl, mix the maple syrup, olive oil, salt, and black pepper.
- Toss the squash slices in the maple mixture until well coated.
- Spread the coated squash on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, turning halfway through, until tender and caramelized.
