  • 2 cups shredded coconut
  • 1 cup granulated sugar
  • 1 tablespoon matcha powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 2 large egg whites
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine shredded coconut, sugar, matcha powder, and salt.
  3. In another bowl, whisk the egg whites and vanilla extract until frothy.
  4. Fold the wet ingredients into the dry ingredients until well combined.
  5. Scoop the mixture onto the prepared baking sheet, spacing them apart.
  6. Bake for 20 minutes or until the edges are golden brown.
  7. Allow to cool before serving.
