Ingredients
  

Soup Base
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup rice uncooked
  • 1 can black beans, drained
  • 1 cup corn
  • 1 cup tomatoes, diced
  • 1 teaspoon lime juice
  • 1 cup cilantro, chopped for garnish

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in cumin and chili powder, cook for another minute.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, rice, black beans, corn, and tomatoes. Reduce heat and simmer for 20 minutes.
  5. Stir in lime juice and cilantro before serving.
