Ingredients
  

Salad Ingredients
  • 2 cups cooked chicken, shredded
  • 2 ears corn, grilled and kernels removed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
Dressing
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste

Method
 

Prepare the Ingredients
  1. Grill the corn until charred, then remove the kernels.
  2. Shred the cooked chicken and chop the vegetables.
Make the Dressing
  1. In a bowl, mix together mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper.
Combine and Serve
  1. In a large mixing bowl, combine the chicken, corn, tomatoes, avocado, onion, and cilantro. Pour the dressing over and toss to combine.
  2. Serve immediately or chill in the refrigerator for 30 minutes before serving.
