Ingredients
  

Couscous
  • 1 cup couscous
  • 1 cup vegetable broth
Vegetables
  • 1 cup chopped carrots
  • 1 cup chopped zucchini
  • 1 cup chickpeas canned or cooked
Spices
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon paprika
Herbs
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh cilantro chopped

Method
 

Preparation
  1. In a large pot, bring vegetable broth to a boil.
  2. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. Fluff couscous with a fork and set aside.
Cooking Vegetables
  1. In the same pot, sauté carrots and zucchini until tender.
  2. Add chickpeas and spices, and cook for another 5 minutes.
Combining
  1. Mix the cooked vegetables with the couscous.
  2. Garnish with parsley and cilantro before serving.
