  • 4 pieces chicken thighs bone-in, skin-on
  • 1 cup dates pitted and chopped
  • 1 large lemon sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth
  • 1 tablespoon honey

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat. Add chicken thighs and brown on both sides.
  2. Remove chicken and set aside. In the same pot, add sliced lemon and cook until caramelised.
  3. Add dates, chicken broth, honey, salt, and pepper to the pot. Stir well.
  4. Return chicken to the pot, cover, and simmer for 30-35 minutes until cooked through.
  5. Serve hot, garnished with additional lemon slices if desired.
