- Heat olive oil in a large pot over medium heat. Add chicken thighs and brown on both sides.
- Remove chicken and set aside. In the same pot, add sliced lemon and cook until caramelised.
- Add dates, chicken broth, honey, salt, and pepper to the pot. Stir well.
- Return chicken to the pot, cover, and simmer for 30-35 minutes until cooked through.
- Serve hot, garnished with additional lemon slices if desired.
