Preparation
- Preheat the oven to 300°F (150°C).
- Season the chuck roast with salt and pepper.
- In a Dutch oven, sear the roast on all sides until browned.
- Remove the roast and set aside.
- Add onions, garlic, carrots, and potatoes to the pot and sauté for a few minutes.
Cooking
- Return the roast to the pot and add beef broth and thyme.
- Cover and place in the oven.
- Cook for 3 hours or until the meat is tender.
- Remove from oven and let rest before slicing.
