Ingredients
  

Beef
  • 3 pounds Chuck Roast Trimmed of excess fat
Vegetables
  • 4 medium Carrots Peeled and cut into chunks
  • 3 medium Potatoes Peeled and cut into quarters
  • 1 large Onion Chopped
Seasoning
  • 2 cups Beef Broth
  • 1 tablespoon Salt To taste
  • 1 teaspoon Black Pepper To taste
  • 2 cloves Garlic Minced
  • 1 tablespoon Thyme Dried

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper.
  3. In a Dutch oven, sear the roast on all sides until browned.
  4. Remove the roast and set aside.
  5. Add onions, garlic, carrots, and potatoes to the pot and sauté for a few minutes.
Cooking
  1. Return the roast to the pot and add beef broth and thyme.
  2. Cover and place in the oven.
  3. Cook for 3 hours or until the meat is tender.
  4. Remove from oven and let rest before slicing.

Notes
