Ingredients
  

Chicken
  • 2 lbs chicken breasts boneless and skinless
  • 1 cup barbecue sauce your favorite brand
Potatoes
  • 4 medium baking potatoes washed and scrubbed

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the slow cooker and cover with barbecue sauce. Cook on low for 6 hours or high for 3 hours until the chicken is tender.
Bake the Potatoes
  1. Preheat the oven to 400°F (200°C). Pierce the potatoes with a fork, rub with olive oil, and sprinkle with salt. Bake for 45-60 minutes until tender.
Shred the Chicken
  1. Once cooked, shred the chicken with two forks and mix it with the remaining barbecue sauce in the slow cooker.
Serve
  1. Serve the pulled chicken on a plate alongside the baked potatoes.
