Prepare the Chicken
- Place the chicken breasts in the slow cooker and cover with barbecue sauce. Cook on low for 6 hours or high for 3 hours until the chicken is tender.
Bake the Potatoes
- Preheat the oven to 400°F (200°C). Pierce the potatoes with a fork, rub with olive oil, and sprinkle with salt. Bake for 45-60 minutes until tender.
Shred the Chicken
- Once cooked, shred the chicken with two forks and mix it with the remaining barbecue sauce in the slow cooker.
Serve
- Serve the pulled chicken on a plate alongside the baked potatoes.
