Potatoes
  • 2 pounds Yukon Gold potatoes or any other waxy potatoes
  • 1 cup mayonnaise for creaminess
  • 1 teaspoon mustard for flavor
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 1 cup chopped celery for crunch
  • 1 cup chopped green onions for freshness

Method
 

Preparation
  1. Boil the potatoes in salted water until tender.
  2. Drain and let cool slightly, then smash the potatoes.
  3. In a mixing bowl, combine the smashed potatoes with mayonnaise, mustard, salt, and pepper.
  4. Fold in the chopped celery and green onions.
