Ingredients
  

Collard Greens
  • 2 bunches Collard Greens Washed and chopped
  • 1 lb Smoked Meat Such as ham hocks or bacon
  • 4 cups Chicken Broth
  • 1 tbsp Olive Oil For sautéing
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 tsp Red Pepper Flakes Optional for heat
  • Salt to taste Salt
  • Pepper to taste Black Pepper

Method
 

Cooking Collard Greens
  1. In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  2. Add garlic and red pepper flakes, cooking for an additional minute.
  3. Stir in the smoked meat and cook for a few minutes.
  4. Add the collard greens and chicken broth, bringing to a boil.
  5. Reduce heat and simmer for about 60 minutes, until greens are tender.
  6. Season with salt and black pepper to taste before serving.
