Ingredients
  

Sardines
  • 4 pieces sardines cleaned and scaled
Tomato Garlic Sauce
  • 2 cups canned tomatoes crushed
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped for garnish

Method
 

Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add crushed tomatoes, paprika, salt, and black pepper. Simmer for 10 minutes.
Cook the Sardines
  1. In another skillet, heat a little olive oil over medium-high heat. Season sardines with salt and pepper.
  2. Pan-sear sardines for about 3-4 minutes on each side until golden brown.
Serve
  1. Serve sardines over the tomato garlic sauce and garnish with fresh parsley.
