Prepare the Rice
- In a pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
- Add rice, paprika, salt, and pepper. Stir well, then add water. Bring to a boil, then reduce heat and simmer until rice is cooked.
Stuff the Squid
- Once the rice is cooked, let it cool slightly. Stuff the squid tubes with the rice mixture.
- Place stuffed squid in a baking dish and drizzle with olive oil.
Bake
- Preheat the oven to 375°F (190°C). Bake the stuffed squid for about 25 minutes or until cooked through.
- Garnish with chopped parsley before serving.
