Spanish Rice-Stuffed Squid

Ingredients
  

Stuffing
  • 1 cup Spanish rice
  • 2 cups water
  • 1 teaspoon olive oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
Squid
  • 4 pieces squid tubes
  • 2 tablespoons parsley, chopped for garnish

Method
 

Prepare the Rice
  1. In a pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  2. Add rice, paprika, salt, and pepper. Stir well, then add water. Bring to a boil, then reduce heat and simmer until rice is cooked.
Stuff the Squid
  1. Once the rice is cooked, let it cool slightly. Stuff the squid tubes with the rice mixture.
  2. Place stuffed squid in a baking dish and drizzle with olive oil.
Bake
  1. Preheat the oven to 375°F (190°C). Bake the stuffed squid for about 25 minutes or until cooked through.
  2. Garnish with chopped parsley before serving.
