Ingredients
  

Rice Base
  • 2 cups sushi rice
  • 2 cups water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
Tuna Topping
  • 8 ounces sushi-grade tuna finely diced
  • 2 tablespoons mayonnaise preferably Japanese
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
Garnish
  • 1 tablespoon green onions sliced
  • 1 tablespoon sesame seeds toasted

Method
 

Prepare the Rice
  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a pot and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 20 minutes.
  4. Remove from heat and let it sit for 10 minutes, then fluff with a fork.
  5. Mix rice vinegar, sugar, and salt in a small bowl and stir into the rice.
Fry the Rice
  1. Heat oil in a frying pan over medium heat.
  2. Form rice into small squares and fry until golden and crispy on both sides.
Prepare the Tuna
  1. In a bowl, mix diced tuna with mayonnaise, sriracha, soy sauce, and sesame oil.
Assemble
  1. Top each crispy rice square with the spicy tuna mixture.
  2. Garnish with sliced green onions and toasted sesame seeds.
