Ingredients
  

Vegetables
  • 1 cup Asparagus chopped
  • 1 cup Peas fresh or frozen
  • 1 cup Spinach fresh
Rice
  • 1 cup Arborio rice
Broth
  • 4 cups Vegetable broth warm
Seasoning
  • 1 tablespoon Olive oil
  • 1 cup Onion finely chopped
  • 1 cup Parmesan cheese grated
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Risotto
  1. In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add Arborio rice and stir for 1-2 minutes until the rice is lightly toasted.
  3. Gradually add warm vegetable broth, one ladle at a time, stirring frequently until absorbed.
  4. Once the rice is creamy and al dente, stir in the asparagus, peas, and spinach.
  5. Cook for an additional 5 minutes, then remove from heat and stir in grated Parmesan cheese.
  6. Season with salt and pepper to taste, and serve warm.
