  • 2 cups sweet corn fresh or canned
  • 1 large avocado diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. In a mixing bowl, combine the sweet corn, diced avocado, halved cherry tomatoes, chopped red onion, and cilantro.
  2. Drizzle with lime juice and season with salt and pepper to taste.
  3. Gently toss the salad to combine all ingredients.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
