Ingredients
  

Vegetables
  • 2 medium eggplants sliced
  • 2 medium zucchini sliced
  • 4 medium potatoes sliced
  • 1 cup tomato sauce homemade or store-bought
Seasoning
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplants, zucchini, and potatoes.
  3. In a frying pan, heat olive oil and sauté garlic until fragrant.
  4. Add the sliced vegetables and cook until slightly tender.
Assembly
  1. Layer the cooked vegetables in a baking dish, starting with potatoes, then zucchini, and finally eggplants.
  2. Pour tomato sauce over the layered vegetables.
  3. Season with salt and black pepper.
Baking
  1. Cover the dish with foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15 minutes until golden brown.
