Ingredients
  

Vegetables
  • 2 cups carrots
  • 1 cup sweet potatoes
  • 1 cup prunes
  • 1 cup onions
Tahini Pesto
  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 1 clove garlic
  • 1 cup fresh basil
Toppings
  • 1/2 cup pomegranate seeds
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Chop the carrots, sweet potatoes, and onions.
  2. Soak the prunes in warm water for 10 minutes.
Cooking
  1. In a large pot, combine the chopped vegetables and prunes. Add water to cover and bring to a boil.
  2. Reduce heat and simmer for 30-40 minutes until vegetables are tender.
  3. In a blender, combine tahini, lemon juice, garlic, and basil. Blend until smooth.
  4. Serve the cooked tzimmes topped with tahini pesto and pomegranate seeds.
