Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the dry ingredients.
- In another bowl, cream together the butter and sugar until light and fluffy.
- Add the ube puree, eggs, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the cookies and cream pieces.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes or until the edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
