Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup butter softened
  • 1 cup sugar
  • 1 cup ube puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
Mix-ins
  • 1 cup cookies and cream pieces

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the dry ingredients.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the ube puree, eggs, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in the cookies and cream pieces.
  7. Drop spoonfuls of dough onto a baking sheet.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
