Ingredients
  

For the Eggs Benedict
  • 4 large eggs fresh
  • 2 slices Canadian bacon
  • 2 English muffins split
  • 1 tablespoon white vinegar for poaching eggs
For the Hollandaise Sauce
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter melted
  • to taste salt
  • to taste pepper

Method
 

Prepare the Hollandaise Sauce
  1. In a heatproof bowl, whisk together egg yolks and lemon juice until thick.
  2. Slowly drizzle in melted butter while whisking continuously until the sauce is thick and creamy.
  3. Season with salt and pepper to taste.
Poach the Eggs
  1. Bring a saucepan of water to a gentle simmer and add vinegar.
  2. Crack each egg into a small bowl, then gently slide into the simmering water.
  3. Cook for about 3-4 minutes until whites are set but yolks are still runny.
  4. Use a slotted spoon to remove eggs and drain on paper towels.
Assemble the Dish
  1. Toast the English muffins and place a slice of Canadian bacon on each half.
  2. Top each with a poached egg and drizzle with hollandaise sauce.
  3. Serve immediately.
