Prepare the Hollandaise Sauce
- In a heatproof bowl, whisk together egg yolks and lemon juice until thick.
- Slowly drizzle in melted butter while whisking continuously until the sauce is thick and creamy.
- Season with salt and pepper to taste.
Poach the Eggs
- Bring a saucepan of water to a gentle simmer and add vinegar.
- Crack each egg into a small bowl, then gently slide into the simmering water.
- Cook for about 3-4 minutes until whites are set but yolks are still runny.
- Use a slotted spoon to remove eggs and drain on paper towels.
Assemble the Dish
- Toast the English muffins and place a slice of Canadian bacon on each half.
- Top each with a poached egg and drizzle with hollandaise sauce.
- Serve immediately.
