Ingredients
  

Cake Base
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup almond milk
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup coconut oil melted
Filling
  • 1 cup vegan ricotta
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. Add almond milk and melted coconut oil, and mix until smooth.
  4. Pour the batter into a greased cake pan and bake for 30-35 minutes.
Prepare the Filling
  1. In another bowl, mix vegan ricotta, powdered sugar, and vanilla extract until creamy.
  2. Fold in chocolate chips.
Assemble the Cake
  1. Once the cake has cooled, slice it in half horizontally.
  2. Spread the filling between the layers and on top of the cake.
