Ingredients
  

Tamale Dough
  • 2 cups masa harina
  • 1 cup vegetable broth
  • 1/2 cup coconut oil melted
  • 1 teaspoon baking powder
  • 1 teaspoon salt
Jackfruit Filling
  • 1 can young green jackfruit drained and shredded
  • 1 tablespoon olive oil
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup bell pepper diced
  • 1 cup corn
  • 1 cup black beans cooked
Additional
  • banana leaves for wrapping

Method
 

Prepare the Filling
  1. Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until translucent.
  2. Add shredded jackfruit, cumin, chili powder, bell pepper, corn, and black beans. Cook for 10 minutes.
Make the Dough
  1. In a mixing bowl, combine masa harina, baking powder, and salt. Gradually add vegetable broth and melted coconut oil, mixing until a dough forms.
Assemble the Tamales
  1. Soak banana leaves in hot water to soften. Cut into squares.
  2. Place a spoonful of dough on a banana leaf, add filling, and fold the leaf to enclose the tamale.
Steam the Tamales
  1. Place tamales upright in a steamer and steam for 1 hour.
