Ingredients
  

Puff Pastry
  • 1 sheet vegan puff pastry thawed
Filling
  • 1 cup coconut cream chilled
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup mixed berries fresh or frozen

Method
 

Prepare the Puff Pastry
  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface.
  2. Cut the pastry into circles and place them on a baking sheet.
Make the Filling
  1. In a mixing bowl, whisk together the coconut cream, maple syrup, and vanilla extract until smooth.
  2. Fold in the mixed berries gently.
Assemble and Bake
  1. Spoon the filling into the center of each pastry circle.
  2. Bake in the preheated oven for 20-25 minutes or until golden brown.
