Ingredients
  

Filling
  • 2 cups Fresh Spinach Chopped
  • 1 cup Vegan Ricotta
  • 1 tablespoon Olive Oil For sautéing
  • 1 teaspoon Garlic Minced
  • 1 teaspoon Nutmeg Ground
  • Salt To taste
  • Pepper To taste
Crust
  • 1 package Vegan Pie Crust Store-bought or homemade

Method
 

Prepare the Filling
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add chopped spinach and cook until wilted. Remove from heat and let cool.
  4. In a mixing bowl, combine the sautéed spinach, vegan ricotta, nutmeg, salt, and pepper.
Assemble the Pie
  1. Place the vegan pie crust in a pie dish.
  2. Fill the crust with the spinach and ricotta mixture.
  3. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown.
  4. Let cool for a few minutes before slicing and serving.
