Ingredients
  

Potato Cakes
  • 4 medium potatoes peeled and cubed
  • 1 cup flour all-purpose or gluten-free
  • 1 teaspoon salt
  • 1 tablespoon olive oil
Filling
  • 1 cup black beans cooked and mashed
  • 1 cup corn canned or frozen
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon lime juice

Method
 

Prepare the Potatoes
  1. Boil the cubed potatoes in salted water until tender, about 15 minutes.
  2. Drain and mash the potatoes in a mixing bowl.
Make the Filling
  1. In a separate bowl, combine black beans, corn, cumin, paprika, and lime juice.
  2. Mix well until fully combined.
Form the Cakes
  1. Take a portion of the mashed potatoes and flatten it in your hand.
  2. Add a spoonful of the filling and fold the potato over to form a cake.
Cook the Cakes
  1. Heat olive oil in a frying pan over medium heat.
  2. Cook each cake for about 5 minutes on each side until golden brown.
