Base
  • 2 cups coconut milk full fat
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
Caramel
  • 1 cup dates pitted
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
Chocolate Layer
  • 1/2 cup cocoa powder
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup

Method
 

Prepare the Ice Cream Base
  1. In a bowl, mix coconut milk, maple syrup, and vanilla extract until well combined.
Make the Caramel
  1. Blend dates, coconut milk, and vanilla extract in a food processor until smooth.
Prepare the Chocolate Layer
  1. Mix cocoa powder, melted coconut oil, and maple syrup until smooth.
Assemble and Freeze
  1. Layer the ice cream base, caramel, and chocolate in a container. Freeze for at least 4 hours.
