Authentic Persian Barberry Rice with Chicken

Ingredients
  

Rice and Chicken
  • 2 cups basmati rice
  • 1 kg chicken pieces
  • 1 cup barberries
  • 1 onion finely chopped
  • 1 tsp turmeric
  • 2 tbsp butter
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Preparation
  1. Soak the basmati rice in water for at least 30 minutes.
  2. In a pot, sauté the chopped onion in butter until golden.
  3. Add the chicken pieces and cook until browned.
  4. Stir in turmeric, salt, and pepper.
  5. Add water and let it simmer until the chicken is cooked through.
Cooking the Rice
  1. In another pot, bring water to a boil and add the soaked rice.
  2. Cook the rice until it is al dente, then drain.
  3. Layer the cooked rice over the chicken in the pot.
  4. Add barberries on top and cover to steam for 15 minutes.
