Ingredients
  

Mushrooms
  • 1 pound Mushrooms Cleaned and trimmed
Pickling Liquid
  • 1 cup Vinegar White or apple cider
  • 1 cup Water
  • 2 tablespoons Salt Kosher or sea salt
  • 1 tablespoon Sugar Optional
  • 2 cloves Garlic Crushed
  • 1 teaspoon Peppercorns
  • 1 teaspoon Dried herbs Thyme or oregano

Method
 

Prepare the Mushrooms
  1. Clean and trim the mushrooms.
Make the Pickling Liquid
  1. In a pot, combine vinegar, water, salt, sugar, garlic, peppercorns, and herbs. Bring to a boil.
Pickle the Mushrooms
  1. Add the mushrooms to the boiling pickling liquid and simmer for 5 minutes.
  2. Transfer the mushrooms and liquid to a jar and let cool before sealing.
